Great in Bentos! Potatoes Rolled in Pork

My mom often put this in my bento, and it is my favorite side dish.
Heat the potatoes in the microwave, and fry in the frying pan; this will make the meat turn out delicious without becoming too hard.
Covering the pan with a lid midway through and steam cooking this is the secret behind keeping the meat soft. For 2~3 servings. Recipe by Mayumi

Cooking Instructions
- 1
Cut the potatoes into match sticks, and microwave. (A little less than 5 minutes at 600w should be sufficient. Microwave until it is mostly cooked through).
- 2
Sprinkle both sides of the pork with salt and pepper, and roll up 3~4 potato sticks in each slice of meat.
- 3
Coat a frying pan with oil, and cook with the overlaps facing down. Flip over once they brown, and cook covered with a lid.
- 4
Once the meat has cooked through, remove the lid, and cook until crispy by evaporating the water.
- 5
Using raw potatoes is much more delicious, but when i don't have time, I use frozen french fries (unfried) instead.
