Chow Fun(Instant Spice Mix Version)

Chow Fun is a classic Cantonese dish. Chow means stir-fry and fun means flat starchy noodle. It is originally seasoned with soy sauce. Then I found a Filipino instant spice mix fits the starchy noodles for Chow Fun perfectly. So here comes this easy version of Chow Fun recipe.
Cooking Instructions
- 1
Get rid of the leaves on the celery and cut them to short pieces. Chop the garlic and cut the the chicken breast to skinny strips.
- 2
Leave the chow fun in a microwavable container and microwave for 2 minutes. This step can soften the noodles, so they don't break to crumbles during stir-fry.
- 3
After 2 minutes microwaving, sperate the noodles to big chunks. Then microwave for another 2 minutes. Separate the noodles to strips.
- 4
Heat the oil and garlic in a wok or pan with med-high heat till the garlic bubbles. Then add the chicken. Keep stirring till the chicken turn white.
- 5
Add the cooking wine and keep stirring for another minute. Add Chinese celery and keep stirring.
- 6
After celery gets soft, turn to low heat. Add the noodles. Stir evenly. Then add the spice mix.
- 7
Keep stirring, so the spice gets on the noodles evenly. If the noodles absorb oil and the dish seems too dry, add 1/2 cup of water while stirring. Then it is ready to serve.

#pavMy recipe is inspired by Mumbai's popular 'Keema aloo pav' and 'Bunny chow', ...Famous street food of Durban, South Africa, where a flavourful lamb is served inside the bun/loaf halves.Boneless lamb meat is marinated overnight and then cooked on slow flame, using its own stock.I have added some fried potato cubes too as Mumbai's famous Keema aloo pav from an Irani restaurant was something I have been craving for! They too serve it inside the bread/bun. Mona Santosh -

Chicken Chow Mein Chicken Chow Mein
I have been making this for years. But I used to buy the chow Mein packet mix. I thought 'how hard could it be to make it myself?'. The answer is 'really easy!'. It's basically oyster & soy sauce, ground cumin & coriander, throw in some chicken and veggies of your choice and some noodles. That's about it! So nice and a good way to get rid of those veggies that need to be used. Ground beef instead of chicken pieces works well too. Enjoy! 😀 ChrisO505 -
