I wanted to eat something other than salad while leaving the crunchy texture of the in-season spring cabbage intact, so I came up with this recipe!
Start cooking the pork with the seam sides down. For 3~4 servings. Recipe by Poron526

Curry Flavored Pork Rice Bowl with Leftover Mango Chutney Curry Flavored Pork Rice Bowl with Leftover Mango Chutney
I always have mango chutney left over after I make soup curry."I should use it up!" , I thought, and used it on the pork rice bowl that I normally make.... yet it was not quite as delicious as I had hoped. So I added some curry powder and it came out great. I guess the chutney doesn't really work without a curry flavor. If you dislike the bitterness of the spinach, cut the spinach into desirable lengths, soak in water for about 2 to 3 minutes, and drain really well. You may not notice the bitterness after this. Curry Chicken with Cabbage Curry Chicken with Cabbage
Curry is a favorite flavor in our family meals. Adding a bit of mayonnaise to the curry gives it a richer taste and elevates the texture. This dish is great not only for the dinner table but also as a lunchbox meal. The vegetables are blanched before stir-frying, so they stay crisp and don’t get too soft. I recommend giving it a try. 凱茜媽咪の廚房Translated from Cookpad Taiwan -

I had leftover daikon radish, so I tried putting it in curry. My husband may like this better than regular curry...? In any case, he had 3 platefuls. The liquid in the pan will evaporate as you simmer, so add water after dissolving the curry roux. This is also delicious with ground pork. Recipe by TWOHEARTS cookpad.japan -
