Sunshine Tomato Noodles for Ramen or Tsukemen Sunshine Tomato Noodles for Ramen or Tsukemen
This is a new version of my very popular "Sunshine Somen Noodle". I added a really simple version of the tomato soup too. Served chilled, this ramen is perfect in the summer. The soup also goes well with pasta, udon noodles, or rice. The soup is diluted, so it's somewhat strong. Adjust the added seasoning to taste. You can add anything to this, such as ingredients typically included to minestrone or tomato sauce pasta. For instance, you can add seasonal raw or sautéed vegetables, chicken tenders, ham, bacon, sea food, soft set egg, etc. The soup is also as delicious as rice porridge! For 2 servings.
