Ingredients

Serves 2 servings
  1. 2 packsfresh Chinese-style noodles
  2. Toppings
  3. 3.5 oz (100 g)ground pork
  4. 1/2 bagbean sprouts (optional)
  5. 1 bunchgarlic chives (nira)
  6. 5or more dried red chili peppers, to taste
  7. 2 teaspoonssoy sauce
  8. 1 teaspoonor more doubanjiang (chili bean paste)
  9. Pinchblack pepper
  10. 2 tablespoonseach vegetable oil and sesame oil
  11. Soup
  12. 3 1/3-4 1/4 cupswater (800–1000ml)
  13. 5or more dried red chili peppers, to taste
  14. 3 tablespoonschicken bouillon powder
  15. 1 1/2 tablespoonsoyster sauce
  16. 3 tablespoonssoy sauce
  17. 5or more garlic cloves, minced (the more, the more authentic!)
  18. Pinchsesame oil

Cooking Instructions

    Mince the garlic (or slice, if you prefer). Cut the garlic chives into 2–2.5 inch (5–6 cm) pieces. Slice the dried red chili peppers into rings.

    Add all the soup ingredients to a pot and bring to a boil for about 1 minute. Drizzle in the sesame oil to finish the soup.

    Heat plenty of oil in a deep frying pan. Add all the garlic and sliced chili peppers, and sauté gently, being careful not to burn them.

    Add the ground pork to the pan. When the color changes, add the soy sauce, doubanjiang, and black pepper. Add the garlic chives and stir-fry lightly, then pour in the prepared soup.

    Place the cooked noodles in bowls, pour the soup with the sautéed pork mixture over the top, and serve! Bring the soup back to a boil before serving so it’s piping hot.

    If using S&B Shantan or Weipa instead of chicken bouillon, use 2–3 tablespoons.
