Basic Square Bread Loaf

This is a delicious plain bread for sandwiches or morning toast that uses basic ingredients. It practically goes with anything!

I used a blend of 2 types of bread flour - 150 g of "Golden Yacht" and 100 g of "Haruyutaka".
With this recipe as a base, you can vary things by using milk or milk + egg instead of the water, and so on. For 1 loaf's worth. Recipe by Natsumi

Ingredients

  1. 250 gramsBread (strong) flour
  2. 20 gramsUnsalted butter
  3. 20 gramsSugar
  4. 10 gramsSkim milk powder
  5. 5 gramsSalt
  6. 180 mlWater
  7. 3 gramsDry yeast

Cooking Instructions

    Put all the ingredients in a bread machine, and select the "dough only" program. (Or you can just bake it in the bread machine instead of in a square bread pan.)

    When the dough-kneading program is over, take the dough out and round it off so that the surface is smooth and taut. Cover with a tightly wrung out wet kitchen towel, and leave to rest for 15 minutes.

    Punch the dough down to deflate it and round it off again. Put the dough into an oiled or greased bread pan. (*See Step 8)

    Cover with the lid, and leave in a warm place or use your oven's bread-rising setting to let it rise (2nd rising).

    When the dough has risen to fill the pan about 80% of the way, bake in a pre-heated 190°C oven for 30 minutes.

    When it's done, take the lid off and drop the pan from about a 10-20 cm height a few times to 'shock' it.

    Take the bread out of the pan, and it's done. If you leave it to cool on a rack loosely covered with plastic, the bread will become moist and easy to slice.

    When oiling or buttering the pan during Step 3, a spray type oil like this is convenient to use.
