Ingredients

  1. 1 packetcooked quinoa,
  2. 1courgette finely grated,
  3. Pinchsalt,
  4. Pinchwhite pepper,
  5. 1small carrot finely grated,
  6. 2 tbspcream cheese,
  7. 1/2 tspminced garlic,
  8. 1 tspfresh mint
  9. 1 tspfresh lemon juice
  10. Fresh breadcrumbs (enough to combine)
  11. Plain flour Vegetable oil to fry

Cooking Instructions

    Combine the cooked quinoa, salt and pepper in a bowl.
    Stir in the cream cheese, and garlic.
    Stir in the fresh breadcrumbs, carrot, courgette mint and lemon juice.

    Mix all the ingredients well, add more breadcrumbs if required, but you still want to maintain a moist consistency.
    Leave covered in the fridge for an hour.

    Heat some oil in a hot frying pan.
    Then carefully roll and flatten your fritters with your hands and dust them with flour.
    Gently fry the fritters until golden and drain on some kitchen paper.
    Then serve with your tzatziki.
