Quinoa and courgette fritters

Cooking Instructions

Combine the cooked quinoa, salt and pepper in a bowl.
Stir in the cream cheese, and garlic.
Stir in the fresh breadcrumbs, carrot, courgette mint and lemon juice. - 2
Mix all the ingredients well, add more breadcrumbs if required, but you still want to maintain a moist consistency.
Leave covered in the fridge for an hour. - 3
Heat some oil in a hot frying pan.
Then carefully roll and flatten your fritters with your hands and dust them with flour.
Gently fry the fritters until golden and drain on some kitchen paper.
Then serve with your tzatziki.
