There’s all kinds of recipes for ham & hocks. This one is a favorite of ours. Whip up some scrambled eggs with some diced onions and peppers, then toss it all together! YUM! Take the hock and cook toss it in with some Lima beans, bake some cornbread, you’ll be in “hog heaven” ! #GoldenApron23

Ingredients

  1. 3large white potatoes, diced
  2. 1good hunk of ham, diced
  3. 1/2of medium yellow onion, diced
  4. 1/2red bell pepper, diced
  5. Salt & pepper to taste
  6. 2 Tbspbacon fat
  7. 4eggs, scrambled
  8. 1-1/2 cupsshredded cheddar cheese

Cooking Instructions

  1. 1

    Place bacon fat in skillet, melt.

  2. 2

    Add potatoes, stir to coat with bacon fat. Add pepper and onions. Cover and let simmer over medium low heat until taters are tender but not mushy.

    Stir in ham. Cover, reduce heat to low simmer.

  4. 4

    Scrambled eggs, stir into ham & taters.

  5. 5

    Sprinkle with cheese just before serving. Enjoy!

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
