Cooking Instructions

Cut the eggplant into large chunks and soak in water. Cut the bell peppers into chunks. Cut the pork belly into 1 1/2-inch pieces, slice the garlic and ginger thinly, and roughly chop the green onion.

In a frying pan, add vegetable oil, garlic, ginger, and green onion, and heat. When the oil starts to sizzle, add the pork belly and stir-fry.

Once the pork belly is separated, add the eggplant and stir-fry. When the eggplant is coated with oil, add the ★ seasonings and 1/2 cup (100 ml) of water, cover, and bring to a boil over high heat.

When the liquid starts to reduce, add the bell peppers and continue to stir-fry until the liquid is completely reduced and the oil sizzles. Sprinkle with ground Sichuan pepper if desired.

For a spicy kick, add 1 teaspoon of doubanjiang in step 2 if desired.

It's also delicious with potatoes. Slice them 1/8 to 1/5 inch thick and add at the same time as the eggplant!
