Cooking Instructions

Wipe the dirt off the fresh ginger with a paper towel and slice it thinly with the skin on using a slicer. Arrange the slices on a baking sheet lined with parchment paper, making sure they don't overlap.

Set the oven to 212°F (100°C) and bake on the top rack for 60 minutes. It's done when the slices are crispy and dry.

Grind the dried ginger finely using a food processor.

Store in an airtight container and keep in the refrigerator.
