Ingredients

6-8 servings
  1. 2 cupsmedium grain rice
  2. 1cooked chicken breast chopped into small pieces
  3. 1 tspgarlic
  4. 1/2 tspginger
  5. 1 tspsesame oil
  6. 1 TbsChinese cooking wine
  7. 2 tspchicken stock powder
  8. 1 tspfinely chopped parsley
  9. 800 mlwater
  10. for serving**
  11. fried onions
  12. spring onion
  13. chilli flakes
  14. cracked pepper
  15. soy sauce

Cooking Instructions

    Wash the rice in cold water till the water is clear

  2. 2

    Add all ingredients to a medium size pot and bring to a boil.

  3. 3

    Cover with a lid and let it simmer, for 10 minutes.

    If the water has evaporated add another cup of water. Congee should be served wet like porrige not dry.

  5. 5

    The simmering process should take about 45 minutes, stirring occasionally and checking the water to rice ratio.

  6. 6

    When finished, serve a bowl with some fried onion, spring onion/scallion, chilli flakes, pepper, and a dash of soy sauce.
