Congee with Bitter Melon

Bitter Melon is nutritious, but has a strong flavor. It's the main reason why I believe mixing it with this specific comfort food dish COULD help a person overcome a cold.

Take note that I am using a YumAsia brand rice cooker that has a porridge option. So how I am making this dish will be different from how you will be able to make it.

I'm honestly posting this so that I remember how I made it when I get sick again~

Ingredients

  1. Rice section
  2. 1(rice cooker) cup of rice
  3. Water
  4. Low Sodium Chicken Stock
  5. (1) 2 Inch piece of Ginger
  6. Garlic (not powdered)
  7. 2whole Ume plums
  8. Black pepper
  9. Meat Section
  10. 1 lbCubed Chicken Breast
  11. 1Bitter Melon
  12. 1 TbspOil
  13. 1 TbspMirin
  14. 1 TbspLow sodium soy sauce
  15. Seasonings of choice

Cooking Instructions

    Shave and cut ginger, with a knife, into small pieces.

    Mash Ume into a paste.

  3. 3

    After washing your rice (not too much), add it to your rice cooker pot.

  4. 4

    Fill the rice cooker with chicken stock up to line "2" and fill with water up to line "3"

  5. 5

    Add your garlic, Ume, and ginger.
    Close the lid and press the "Porridge" option. This will take 1 hr and 30 min to cook!

    Cut the bitter melon in half and remove the seeds and fluff. Cut them in half again and then slice into bite sized pieces.

    Add the seasonings, oil, Mirin, soy sauce and chicken into a pan.

  8. 8

    Make sure chicken is mostly cooked before adding the bitter melon to the pan.

  9. 9

    Cook both until bitter melon is soft. If needed, cut chicken into smaller pieces.

  10. 10

    When the porridge is done in the rice cooker, add the cooked chicken and bitter melon to the mix.

    In your own bowl, add black pepper.
