Recipe from Weight Watchers New Complete Cookbook

Love to experiment with this one. I used pinto beans since I was out of black beans. Also had to use dried cilatro. I prefer to use a sugar substitute as well. This is also good with fresh pineapple instead of mangoes, much sweeter!

Ingredients

4 servings
  1. 1mango, peeled, pitted and diced
  2. 1small red onion, diced
  3. 1/2red bell pepper, diced
  4. 1/2 cfresh or thawed frozen corn kernels
  5. 1/2 cblack beans, rinsed and drained
  6. 2 Tchopped fresh cilantro
  7. 2 Tlime juice
  8. 1/4 tspsugar
  9. 1/4 tspsalt
  10. 1/8 tsppepper

Cooking Instructions

  1. 1

    Stir together all ingredients in medium bowl until well mixed. Cover and refrigerate at least 30 minutes. Use within one day.
