Ingredients

  1. 3eggs,seperated to whites and yolks
  2. 100 gfresh spinach
  3. 3 pinchbaking powder
  4. 3 pinchsalt
  5. 3 pinchjeera or roman cumin
  6. 2 tbspricotta or cream cheese
  7. halfzucchini
  8. 1 tbspsunflower oil

Cooking Instructions

  1. 1

    First we make the spinach rolls. In a mixer machine mix the spinach leaves with the egg whites,salt, jeera,baking powder and ricotta. We fry it in a greased pan, flipping it once.

    Then we make the filling, we spiralize the zucchini,and fry it in a little oil,we mix the egg yolks in it too plus salt

  3. 3

    We put the filling into the spinach "tortillas" and garnish with fresh spinach leaves, or fresh ricotta. enjoy

I like to discover new spices and ideas.i never try to follow the "official" rules in cooking, but rather my main ingredient is my passion. When i imagine a dish, first i cook it in my head and i try to imagine how it will taste like. if the ingredients will be in harmony, how can i make it technically and what side dishes would match well. what i have learnt from south-east asian cuisines is, that fresh ingredients are unbeatable. in nutrition, taste, look and color, crispiness and moistness. my recent goal is to use as many fresh herbs and veggies as possible. there are only a few dishes that i dont like, few type of seafood and seaweed. any other ingredient is on my horizon if i plan to create something new,cooking is my art.
