Ingredients

  1. 1 1/2 lbskielbasa, sliced into rounds (about two 12oz packages)
  2. 1/2large onion, thinly sliced
  3. 1bell peppers (any color), thinly sliced
  4. 1small head of cabbage, shredded
  5. 3 clovesgarlic, minced
  6. 2 tbspolive oil
  7. 1 tspsmoked paprika
  8. 1 tspsalt (to taste)
  9. 1 tsppepper (to taste)

    Start by slicing the kielbasa into rounds, and thinly slice the onion and bell peppers. Shred the cabbage and mince the garlic.

    Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced kielbasa and cook until browned, about 4-5 minutes. Remove the kielbasa from the skillet and set aside.

    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion and cook for 2-3 minutes until it begins to soften. Then, add the minced garlic and cook for another minute until fragrant.

    Stir in the bell peppers and cabbage, and season with smoked paprika, salt, and pepper. Cook, stirring occasionally, until the vegetables are tender but still crisp, about 5-7 minutes.

    Return the browned kielbasa to the skillet, mixing it with the vegetables. Cook for an additional 2-3 minutes until everything is heated through and well combined.

    Garnish with fresh parsley if desired, and serve hot. This dish pairs wonderfully with crusty bread, rice, or mashed potatoes.

    TIPS- Add a pinch of red pepper flakes for a bit of heat.
    VEGETARIAN- Substitute the kielbasa with your favorite plant-based sausage.
