Mangshor Korma (Bengali Mutton Curry)
#reststyle - This is a traditional Bengali style Mutton Korma / curry, where I have used large chunks of potatoes, as it is well known, Bengalis love them in each and every dish. And to think of preparing a mutton curry without it, is not easily digestible. Mangsho /Mutton is a very popular sunday menu in almost all Bengali bones and is equally relished in all Bengali restaurants too. Here in this particular version of mine, I added some roasted fresh coconut and fried onion along with the usual ingredients to make the dish more rich and aromat. It is relished either with plain steamed rice, poori or chapati. There is no ham in trying it out with jeera rice, khushka, naan, tandoori roti or any Indian bread. There are obviously many versions to this dish, where yoghurt or poppy seeds are also added according to individual preference.

California Farm Fresh Panang Curry Paste and Sauce
Here is the way I make fresh panang curry paste. I use mortar and pestal for a small amount of paste. You can use your food processor if you increase the amounts in this recipe by four, so the processor blade can grab the ingredients. Paste is easy to scoop even when kept frozen.

Beef Massaman Curry - Kaeng Matsaman
This dish was chosen to be No.1 in the "World's Most Delicious Foods Top 50" in CNNGo. This is a popular curry in our house. I substituted tamarind with lemon juice. Massaman means Muslims. The ☆ Indian spices are originally brought from Thailand by Muslim traders. You can make this in the same way as you make green curry or yellow curry. The secret is to sauté the curry paste and mix in the coconut milk in Step 3 and Step 4. I used the ☆ spices in Step 2 to increase the fragrance, but you can omit them as they are already included in the curry paste. I added lemon juice instead of tamarind. Recipe by gingamom

Easy Indian Style mild curry
We do like Indian food, well myself more so than my wife. So I always am trying to find a recipe that is less than 75 ingredients, about 15 of which I have never heard of, let alone able to find. Plus I need things sort of quick since I work and have to come home and make dinner. A rice bowl once a week really fits the bill for us. So I sort of took a couple recipes, modified for ground meat, and readily available spices in the average American market, and this recipe was born. Quite frankly, the only thing I had to buy that wasn't in my spice cabinet or pantry was the coconut milk. My wife said it needed more tomato paste, I thought it had too much. She said it was too spicy, so I modified the crushed red pepper amount to bring that down. We both agreed the addition of green peas would be wonderful. So next time, 1/2 - 1 cup of peas. This is a strong good Indian flavor, try it, let us know how you like it.

Turkey Curry
There are many types of curry for all tastes - mild, spicy, very spicy, and impossibly spicy. Thai curry, korma curry, Japanese curry, tandoori.... The properties of curry depend on the blend and the proportions of the different spices in each one.During my first year at university, I lived in a house with a Hindu woman who taught me how to make curry in various ways. Madras curry is the one my family likes the most. Its properties make it pair very well with tomato, coconut milk, and yogurt. I made this version yesterday - it's an easy and quick curry with sensational flavor and textures.
