I decided to recreate fake away Lagos plantain and ham frittata; I used shredded chicken in place of ham as I could not get ham. it was a saturday after morning walk meal, quick and easy to prepare and it taste amazingly yummy; every bite was a hit back to back. Also I had a little twist on my own recipe. lets I forget kids will love this

Ingredients

  1. 2 sticksplantain
  2. 2fresh tomatoes
  3. 3habanero pepper
  4. 1red bell pepper
  5. 1 pinchoregano
  6. 1/2 cupvegetable oil
  7. 1/2 cupshredded cooked chicken
  8. 1/2bulb onions
  9. to tastesalt
  10. 1/4milk
  11. 4eggs
  12. 1 handfulParsley leaf
  13. cooking spray

Cooking Instructions

    Preheat oven 220degree

  2. 2

    Slice plantain toss a little salt and set aside; heat up frying pan add vegetable oil and fry plantain, drain with a paper towel and set aside

    Dice tomatoes, pepper, red bell pepper, onions and set aside

  4. 4

    In a seperate bowl break eggs, add milk whisk and set aside

  5. 5

    Heat up frying pan and add 4tbsp of vegetable oil, start frying the shredded chicken, for about 3 to 4 mins add the onions, tomatoes and pepper, fry for about 4 mins, then add the bell pepper, stir and turn off heat

    Spray cooking spray in a baking dish and layer fried plantain, (I planned for 2 layers) add the first batch of fried tomatoes sauce on top of the plantain and pour the first batch of milk, place the final batch of plantain on top of the first batch and add the remaining tomatoes sauce and pour the remaining whisked egg

    Send the baking dish into the oven for 10mins, remove from oven and garnish with fresh parsley leaf.
