Matumbo(intestines) stew is very delicious. It takes time to prepare but when you finish cooking it can be very delicious and satisfactory
Cooking Instructions

Wash the intestines thoroughly and put in a pressure cooker and add salt and 3 cups of water and let it cook for one and half hours.

In another sufuria put it the sliced onions and 3tbs cooking oil. let it cook until it turns brown at medium heat.

Add the tomatoes and cover for 2minutes. crash the now tender tomatoes until it becomes pasty then add the now cooked matumbo and stir. If there was any stock left use it to make soup for the stew or add 1/2 cup of water and cover so it can cook for 2minutes. Serve while hot.
