Ingredients

  1. 1/2 Cupmilk
  2. 1 1/2 Teaspoonsvinegar
  3. 1 Cupcornmeal organic yellow
  4. 1 Cupall purpose flour
  5. 1/2 Teaspoonbaking soda
  6. 1/2 Teaspoonsalt
  7. 1/2 Teaspoonpepper
  8. 14 oz canscreamed corn of 1
  9. 1/4 Cupvegetable oil
  10. 2eggs
  11. 1/4 Teaspoonpepper sauce hot
  12. 1 Cupcheddar cheese sharp , shredded
  13. 1/2 Cupcorn frozen niblets , thawed
  14. 3spring onions , thinly sliced
  15. 1/4 Cupparsley , finely chopped

Cooking Instructions

    In a small glass bowl, stir the milk with vinegar; let stand 5 minutes.

    In a large bowl, whisk together the cornmeal, flour, baking soda, salt and pepper.

    In another bowl, whisk together the creamed corn, milk, oil, eggs and hot sauce. pour mixture over the cornmeal.

    Sprinkle with the cheese, corn, spring onions and parsley. stir just until the dry ingredients are all moistened (try not to over mix).

    Spoon into greased muffin cups and bake in the center of a 200 degree C oven for about 20 minutes (until a skewer inserted in the center comes out clean).

    Let cool in the tin for 10 minutes, then transfer to a wire rack to cool. serve!

Hey! I'm a super busy mommy to 3 year old mixed gender twins. I guess that's enough said about the amount of time i get to spend cooking :). Most of the food I cook is about saving time, but not compromising on flavour. My biggest supporter is my hubby, who loves trying out new recipes and experimenting with different flavours. We love entertaining friends, and our home is the usual watering hole in our gang. So we try to come up with some innovative, fun food. Hope u guys like them!
