I love quick breads because they are so versatile. You can add so many things or keep it real simple. I made this with left over whipping cream in place of buttermilk. It made the bread soooo moist and slathered it in home made chocolate glaze. It's awesome without the glaze too.

Ingredients

12 - 14slices
  1. 250 gAll purpose flour
  2. 150 gSugar
  3. 1and half teaspoons baking powder
  4. 1/2 teaspoonbaking soda
  5. 1 cupbuttermilk
  6. 1large egg
  7. 1/4 cupunsalted butter (melted), vegetable or olive oil
  8. 100 gdried cranberries

Cooking Instructions

  1. 1

    Heat oven to 350 degrees and butter and flour a loaf tin.

  2. 2

    Mix the flour, sugar, baking powder and baking soda in a bowl. In a separate bowl, whisk the buttermilk, egg and melted butter or oil.

    Pour wet ingredients into dry and gently mix with a fork. Do not overmix.

    Pour batter into prepared pan and bake. Mine baked for 55minutes.

    Set on a rack to cool.

    Enjoy with your beverage of choice.

    Refridgerate any leftover wrapped tightly in cling film
