Coconut Sambal (SAMBALA KALUKU)

Ever heard of Sambal Kaluku? For people that live in the Makassar area must have been familiar with this sauce. Kaluku sauce is quite popular and is very popular with the Sulawesi in general and especially the Ujung Pandang. As with any sambal roa recipe, Kaluku sauce is also made of processed fish as a main ingredient. Only the fish used in this Kaluku sauce recipe is the cork fish (snakehead), thus providing a distinctive flavor.

This dish is part of the daily menu of housewife mothers there. Sambal Kaluku is usually eaten together with domestic poultry, which is a type of lemper cuisine or savory rice cake (because it is cooked with coconut milk). But Kaluku chili recipe is also delicious with other recipes such as chicken, seafood, vegetables to fried along with warm rice. With a concoction of cayenne pepper mixed with grated young coconut makes Sambal Kaluku a very special taste. Mix ingredients cork fish, onions and celery apparent tempting specialties in this Kaluku sauce. This sauce has a spicy taste that can shake up the tongue of the peoples.

Many use cayenne pepper taste here adapted by the author, and because I like a slightly spicy chili quite a lot. Vegetables can be combined to suit the tastes of its kind, able to cooked (boiled) and raw.

Ingredients

  1. 100 gramsdried cork fish (snakehead), small pieces
  2. 125 gcoconut, grated
  3. 1/2 tbspgranulated sugar
  4. 1/3 tspsalt
  5. 2 tbspoil for frying
  6. SEASONING
  7. 6 pcssmall red onions
  8. 4 clovesgarlic
  9. 8 pcscayenne pepper
  10. 1 pcred chillies
  11. 3kaffir lime leaves, remove the leaves' ribs and thinly sliced
  12. 4 stalkscelery, thinly sliced
  13. 6cayenne peppers, sliced thin
  14. VEGETABLES
  15. 1 handfulsprouts
  16. 2long bean stalk, sliced 2 cm
  17. 4bay cabbage, sliced ½ cm width
  18. 5sprigs watercress, cut

Cooking Instructions

    Thinly slice 6 cayenne peppers, celery and lime leaves. Set aside.

    Puree 8 cayenne pepper, onion, garlic and red pepper. Stir-fry until fragrant.

    Add the grated coconut and cork fish, stir grated coconut until it changes color.

    Add seasoning slices, sugar and salt. Stir again, doing until slightly dry but still a little moist (moistness or dryness can be customized).

    Serve the sauce together with vegetable stew and warm rice.

    NOTE : Ikan gabus (Channa striata) or aruan, common snakehead, snakehead murrel,chevron snakehead and striped snakehead.
