Avocado and Kippers Salad Sandwich

This was something I created (to the best of my knowledge). I've been modifying it and trying different things, until I hit on this. The very slight smokyness of the kippers, the avocado, a little onion (red, sweet, green or chives all work) all work together. You can add some spice, but it can overpower this one. If your avocado is little over ripe, it's still ok.

Avocado and Kippers Salad Sandwich

Ingredients

  1. 1 canKippers
  2. 1onions (red, sweet, green or chives)
  3. 1/2 tspgarlic powder
  4. 1/4 cupmayonnaise
  5. black pepper
  6. 1 eachAvocado
  7. 8 sliceBread

Cooking Instructions

    Drain liquid from kippers

  2. 2

    Use a fork to extract the kippers into a bowl

  3. 3

    Break kippers up with fork into smaller pieces.

  4. 4

    Chop onion into small pieces, add to bowl

  5. 5

    Add garlic powder to bowl

  6. 6

    Add black pepper

  7. 7

    Mix everything that is in the bowl together

    Add mayonnaise, and mix, add a little more (like a teaspoon) until it's the constancy you like.

    Chop up avocado, into little cubes. Avocado is actually optional, kipper salad is very good without it also.

    Stir avocado into the kipper salad

    Build a sandwich. I just happen to like mine "open face", do what you like.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
