Cabbage and Chicken with Tortillas

Ingredients

12 servings
  1. 1 poundshredded cabbage
  2. 1 poundchicken thighs boneless and skinless
  3. 1 pintwater
  4. 1-1/2 teaspoonground cumin
  5. 1 tablespoonground annatto powder
  6. 1 tablespoonminced garlic
  7. 1 tablespoonground paprika
  8. 1/2 cupraisins
  9. 1/2 cupchopped celery
  10. 1large red onion diced
  11. 1/2 cupsliced green olives with pimentos
  12. 1/2large yellow bell pepper
  13. 1/2large red bell pepper
  14. 1 teaspoonsalt
  15. 1/2 teaspoonground white pepper
  16. 1/3 cuptomato paste
  17. 1/3 cupfinely chopped cilantro
  18. 1/3 cupfinely diced parsley
  19. 2 tablespoonssugar
  20. 12medium-sized flour tortillas
  21. 1-2medium limes cut into wedges

Cooking Instructions

  1. 1

    In a pot add the water, spices, raisins, celery and peppers. Bring to a boil and reduce to a simmer.

    Slice the chicken and add

  3. 3

    Simmer 15 minutes covered shred the chicken and add the onion. Cover and simmer for 15 minutes more.

    Add the cabbage, cilantro, and parsley, and stir

  5. 5

    Add tomato paste and sugar, simmer stirring occasionally for 10 minutes. Taste and adjust spices.

    Heat tortillas and serve with lime wedges.
