I like this exquisite combination of refreshing flavor of vinegar and sweetness and spice. If water is too much or too little, please adjust.
Cooking Instructions

Heat the oil in a pan and stir ground pork until it changes color and smells good.

Add deep fried tofu and cook 1 min, put sake, soy sauce, sugar, vinegar, water and simmer until 3/4 of the liquid is gone.

Turn off the heat once, pour the dissolved potato starch and stir slowly. Turn on the low heat and keep stirring until thickened.

This is a simmered dish that my mother made when I was small. When I was young, I found it less appetizing because the green peas and aburaage were drenched in the color of the eggplants. Now this is the sort of Japanese flavor that makes me homesick when I am overseas. I tried to reproduce this nostalgic dish by asking my mother for instructions.1. Make sure to chop the eggplants into large pieces. They break apart and dissolve if they are too small.2. Stir-fry the green beans first so that the eggplants don't soak up too much oil.3. My mother's simmered dishes - like this one - uses high heat and needs to be flavored quickly, so make sure to check the amount of water in the pan occasionally.4. However, it is quite difficult to cook it because it's natural flavour is plain. It has not so much taste, white pale color, and subtle smell.I've had a lot of tofus in my life and as I remember, the tofus I had were great because of something else that came with them: the sauce, the coating wheat, or vegetables that were the ingredients of the dish besides the tofu itself.And oh, yes, they were deep fried. Everything tastes great when it's deep fried.Being Dutch, limiting eating deep fried stuffs, and doesn't consume as much tofu as I do as an Indonesian, my husband never thinks of tofu as an appealing dish.
