Wonderful tea to have in the evening, after a spicy meal or in the morning to kick start the metabolism.

Ingredients

  1. 2 tbspfresh ginger
  2. 2 1/2 cupwater plus 1/4 cup
  3. 1 tsplemon juice
  4. 1 tsplemon zest (1/2 lemon)
  5. 1 tsphoney

Cooking Instructions

    Peel and thinly slice ginger.

    Pound to break apart with mallet.

  3. 3

    Grate the lemon.

  4. 4

    On high heat, add ginger, lemon zest and lemon juice to water and bring to boil, then reduce heat, but maintain a slow boil for about 10 minutes.

    Drain.

    Add 1/4 cup water.

  7. 7

    Add honey (if desired).
