I'm always looking for a way to vegan-ize common recipes and this mixture is gold. I was surprised how yummy it turned out in comparison to other mixtures I've tried. It wasn't super dense like my other attempts. I like that it was sweet as well (without being overpowering). ☺️

Ingredients

  1. 1 2/3 cupWhole wheat flour
  2. 1 cupMashed bananas
  3. 1/2 cupStevia sweetener
  4. 4 tbspCoconut oil, softened not melted
  5. 1/4 cupWater
  6. 1 tbspVanilla extract
  7. 1 tspBaking soda
  8. 1/2 tspSea salt
  9. 6 tbspApple sauce, natural
  10. 1/2 cupSoy yogurt (or coconut yogurt)
  11. 1/2 cupChocolate chips, Chocolate Dream brand is vegan

Cooking Instructions

    Preheat the oven to 350°F. Mix the sugar with the apple sauce and softened coconut oil in one bowl. Make sure the ingredients are mixed well.

    Mix the flour, baking soda, and salt in another bowl. Then mix with the ingredients in the other bowl. Make sure to mix them well.

    Add the banana, yogurt, water, and chocolate chips. Mix well with the previous ingredients.

    Scoop mix into a 9 inch bread tin and bake for 60 minutes. Check to make sure it's not too moist with a poker. If it is bake for a few extra minutes.
