Eggplant Parm - Sub
When making eggplant parmigiana for dinner, I make a mental note to make a little more for delicious sandwiches the next day. Or if I'm in the mood for this warm Italian sub outright, I get right to it with the prep. Add cooked Italian sausage or roasted red peppers if so desired! My recipe for baked eggplant parm is within the ingredients section below.

Snackle box Sub/ sandwich bar
All ingredients are of choice, use what you have / what you like. Easy for subs or sandwiches , everything is all in one place easier to make subs or sandwiches. One of our favorites to make other than the salad bar one. Can use multiple containers one for vegetables and one for meats. I ran out of room on this one there, i still had banana peppers, lettuce, baby spinach, to use but not enough to use another container. In this one pictured I used: mushrooms, red onions, cucumber, black olives, ham, and turkey, lunchmeat, pepperoni and salami, tomatoes, pepper jack cheese, and provolone cheese. Some compartments have two things in them: the meats and cheeses . This is a great option for on the go to take somewhere or even food prep . We like to pick out of throughout the week for lunches and restock as needed.

Subway at home/ sub board
Our favorite to do. Subway at home can go all out or what you already have. Too sub boards, to bento box lunches , picnic. Sports night, movie nights, holiday parties you name it can’t go wrong here something for everyone . I like to food prep every thing and cut all of the veggies and use the snackle box and set up for the board is a snap 🫰 . Subway or Jersey Mike’s at home .I like to get my hoggie buns from sams club so i have extras to roll into lunches for the week with any leftover. ( I did use my bento containers for this night as pictured it was perfect for just the subs & chips was out of paper plates)

Leftover subs ingredients
What to do with all of that lettuce from any home made subs ... make a loaded salad with whatever you have leftover. ( and give it a name, this would be a Italian salad.) I had planned ahead knowing I wasn’t going to use all of my ingredients and I got one cucumber to go into this salad and could also add some hard boiled eggs too. I always try to find something to do with the lettuce, so iam not wasting money and it goes bad, I try and plan out 3 dinner meals ahead of time. Even if I just make b.l.t.’s or a tacos, if I do tacos and have leftovers lettuce I make a poor man salad the next day .

Italian subs

Lionhead Meatball Sub
I had 3 of these huge Lionhead meatballs. I do like meatball subs. I only like certain condiments on my regular meatball subs. So these meatballs are Asian style, so I said to myself, self, I need something similar to Asian cuisine. Without just making it I had some of this Mayochup my daughter got me to try. It kinda reminds me of yum yum sauce. So that is the origin of this recipe.
