One of my favorite easy breakfast recipes. I freeze these as well to just reheat in microwave for a quick on the go breakfast. Great for low carb diets!
Mini Egg, Mushroom and Spinach Frittatas
One of my favorite easy breakfast recipes. I freeze these as well to just reheat in microwave for a quick on the go breakfast. Great for low carb diets!
Cooking Instructions
- 1
Sautee mushrooms in olive oil until softened. You can also add a couple tsp of water or broth to pan to steam them faster. Drain mushrooms in colander.

Combine all other ingredients and mix well with cooled mushrooms.
- 3
In a sprayed 12 muffin tin, add egg mixture to 3/4 full. Bake at 350 for 20-23 min or until golden.

If your oven is large enough then just add the eggs into the mixture and then straight into your oven. If not then do what I do toss the ready made ingredients from the skillet into a oil brushed baking pan and then add the eggs. This is a bit of extra work but at the end it is all worth it. 🙂Who knows maybe someday I will be able to afford a nice size oven, I will keep hoping 🙂 Foodzesty -
