Ingredients

  1. 1/2 tspcayenne pepper
  2. 1/2 tspground black pepper
  3. 1 tspsalt
  4. 2 tspfresh thyme
  5. 12 ozdiced some boneless chicken breast
  6. 2 tbspveggie oil
  7. 2 mediumchopped onions
  8. 2 cloveminced garlic
  9. 2bell peppers
  10. 2celery stalks
  11. 2/3 cupsmoked ham
  12. 1 cupchorizo sausage
  13. 14 ozcanned chopped tomatoes
  14. 1 cupchicken stock
  15. 1 lbfrozen cooked shrimp
  16. 3 cupcooked rice
  17. 2 oztomato paste
  18. 2/3 cupchives for garnish
  19. 1 cupsweet corn

Cooking Instructions

  1. 1

    Combine all ingredients, except rice in slow cooker. Cook on low heat for 6 hours or high heat for 3 hours. If using raw shrimp add to slow cooker with 30 min remaining.

    Cook rice separately.

    Mix rice and slow cooker in a large bowl. Keep separate if you are storing the jambalaya.

    Portion mixture and garnish with chives.
