Pickled Red Cabbage

Ingredients

  1. 1 headred cabbage
  2. 1 1/2 table spoonkosher salt
  3. 1/2lemon’s juice
  4. 4-5 clovesgarlic
  5. 1/2 bunchbasil or Italian parsley
  6. 1 1/2 cupvinegar (Apple cider or red vine vinegar)

Cooking Instructions

    Cut red cabbage to sliced

  2. 2

    Wash them with warm water

  3. 3

    Use salt to rub cabbage for 5-6 mints

  4. 4

    Let them rest for 15 mints. Peel garlic cloves, collect parsley or your choice of green to give aroma to your pickles

  5. 5

    Find a good glass jar and put cabbage, when you come to half way, add garlic, hot pepper if you like and finish adding cabbage to the jar.

    Add leftover juice of resting cabbage

  7. 7

    Add vinegar and Lemmon juice

  8. 8

    Use plastic film to cover the jar and close the lid. Keep in dark place about 5 days

    I added to my salad.

I used to be a runner. One day middle of the run, I had my feet numb up to my knee. It was sciatica from a car accident years ago. Then because having problems with my Achilles, I started using a cane. Now I changed my diet completely... no more sugar or process foods. My recent recipes are vegetarian, I do not eat meat anymore! Also no sugar, flour and very low carbohydrate meals .This is my journey now. Good luck on yours! 😄✌️
