Ingredients

6 500ml jars
  1. 1small red cabbage head, minced
  2. 1small green cabbage head, minced
  3. 3 cupwater
  4. 3 cupwhite vinegar
  5. 1 1/2 cupwhite sugar
  6. 6 tablespoonpickling salt
  7. 6 tablespoonjuniper berries
  8. 6 tablespoonpickling seasonning mix

Cooking Instructions

    Combine water, vinegar and sugar in a pot and bring to boil.

  2. 2

    Add 1 tablespoon of pickling salt, 1 tablespoon of juniper berries and 1 tablespoon of pickling seasonning mix to each jar.

    Fill in the jars with cabbage, making sure it's compact and cover with hot liquid, leaving 1/2" of empty space till opening.

    Proceed with sterelisation.

  5. 5

    Let marinate 1 month before opening.

Just made 6x 1L jars. Doubling the liquid was not enough. Ended up needing 7 cups of water, 7 cups of white vinegar and 3 1/2 cups of white sugar.
