Rich and delicious! Making your own Enchilada Sauce allows you to spice it up to your liking.
Cooking Instructions

Heat oil in a skillet over medium-high heat. Stir in flour and chili powder. Reduce heat to medium and cook until lightly browned, stirring constantly to prevent flour from burning.

Gradually stir in tomato sauce, water, cumin, garlic powder, and onion salt. Stir until smooth. Continue cooking over medium heat, approximately ten minutes, or until slightly thickened. Season with salt to taste.

Make certain that you don't wear your good clothes because the process can get a bit messy.I prefer to make my sauce the day before for several reasons. It is one less thing to prepare the day of and if you allow the sauce time in the refrigerator, it will get thicker. This sauce is not the typical "gringo" flour-based sauce, so allowing it time to get thicker really helps the sauce adhere well. If you do make the sauce ahead, you may notice that it appears gelatinous; mix well before using.


Cilantro Enchilada Sauce
We served over a Wet Burrito and melted the cheese over it . It tasted great !!!. We also added some to the inside with the meat. Be careful not to over cook the sauce. Taste great with chicken ,pork or beef.

Slow-roasted chicken and enchilada pan sauce
This recipe came about because I wanted to use the leftover enchilada sauce from my previous post for Southwest stuffed peppers. There's not much to it, and it's a total cinch to make. The only real investment required is time, and that's not a bad thing. Because the reward for your patience is fall-off-the-bone tender chicken smothered in rich, flavourful sauce. Also, while the chicken's in the oven, you're free to do what you want. Like clean the kitchen. Or play with your kids. Or, if you're like me, binge the latest season of Chef's Table that just dropped on Netflix. Not bad at all.

These shrimp and crab enchialadas feaure the hatch chili, a moderately spicy delicious chili that I learned about here on this app from MMOBRIAN. Our local market just started having them available . I bought a few and roasted and stuffed them with a wild rice and cheese mix and we loved the spicy but not overpowering heat and delicious flavor. This brought me to thinking they would make a great sauce for enchalaradas. The dish turned out so good! If you can't find the hatch chili this can still be made with another chili such as a poblano or anaheim, the jlavor will be different as will the spice level but they will still be delicious.
