Had a hankering for homemade enchiladas one night and stumbled across this little gem. It tastes great and very easy.

I’ll get a better picture next time I make it. This was for a homemade pizza. I’ll post the dough soon.

Had a hankering for homemade enchiladas one night and stumbled across this little gem. It tastes great and very easy.

Ingredients

  1. 1/4 cupvegetable oil
  2. 2 tablespoonsself-rising flour (Can be Gluten Free)
  3. 1/4 cupRed chili powder
  4. 1 (8 ounce)can tomato sauce
  5. 1 1/2 cupswater
  6. 1/4 teaspoonground cumin
  7. 1/4 teaspoongarlic powder
  8. 1/4 teaspoononion salt salt to taste

Cooking Instructions

  1. 1

    Heat oil in a skillet over medium-high heat. Stir in flour and chili powder, reduce heat to medium, and cook until lightly brown, stirring constantly to prevent burning flour.

    Gradually stir in tomato sauce, water, cumin, garlic powder, and onion salt into the flour and chili powder until smooth, and continue cooking over medium heat approximately 10 minutes, or until thickened slightly. Season to taste with salt.
