Tomitio cauliflower and bacon pie

Ingredients

  1. crust
  2. 2 largeeggs
  3. 1 cupmozzarella cheese, shredded
  4. 1 lbcauliflower
  5. 1/4 tspsalt
  6. 1/4 tspgranulated garlic powder
  7. filling

  9. 1/4 tspsalt
  10. 5 largeeggs
  11. 1 cupmozzarella cheese, shredded
  12. 1/4 cupgrated parmesan cheese
  13. 1/4 tspgranulated garlic powder
  14. top
  15. 3/4 lbbacon
  16. 1/4 cupgrated parmesan cheese
  17. 2 tbspmargarine

Cooking Instructions

    Microwave the cauliflower for 6 minutes. Squeeze the liquid out of the cauliflower. Microwave the cauliflower 3 more minutes let sit 2 minutes squeeze the liquid out again. Set aside let cool.

    If your tomitios came with husk take them off and wash the tomitios. Cut each one in half as you wash them. Heat margarine in a pan add tomitios to pan.

    Add spices to tomitios. Cook for about 10 minutes and mash the tomitios. Cook till liquid is reduced. About 10 minutes. When thick turn off heat. Let cool.

    Mix the cauliflower, mozzarella cheese, salt, 2 eggs, and garlic. Form in a 9 inch deep dish pie pan sprayed with nonstick the crust ingredients.

    When in pan, put into oven and turn on to 400° Fahrenheit. Let heat up and when its up to temperature let bake 15 minutes.

    Take out of the oven. Set aside and add parmesan cheese. Mix the tomitios, cheese, eggs, salt, and garlic. Add to crust.

    Add parmesan cheese on top. Work a lattice work of bavon on top add back to oven back 47 minutes or till done let sit 10 minutes. Serve hope you enjoy!
