Cooking Instructions

In a large stock pot add all ingredients with water and bring to a boil.

Set aside and allow to cool to room temp. Add ice if needed

Wash turkey, remove giblets, and place it breast side down in a larger stock pot. Pour the brine over the bird, and inside the cavity. Fill with cold water to the top make sure entire bird is submerged.

Cover and and place in fridge for upto two days

When ready, remove the bird, rinse it with water and discard the brine.

Season your turkey and marinate in fridge over night

Cuban Mojo Pork Roast
This recipe is originally made by Roy Choi and it was featured on the 2014 movie Chef. The recipe was adapted by Nagi from RecipeTin Eats but the original recipe called for a 1.75kg boneless pork shoulder. Roll the pork up and tie with a string to form a roll. Roast in a 220C oven for 30 minutes, then reduce the oven temperature to 190C and roast for 1 hour 30 minutes, or until a thermometer inserted into the middle reads 70C.


Cuban sofrito
Add a few tablespoons to a slow cooked pork or chicken recipe. Add also to flavor a rice dish! Delicious Latin condiment!

Turkey Brine
This brine will make your turkey extra moist. We tried the brining method a few years ago and haven’t looked back.The brine recipe is enough for a 16-24 pound turkey. I will be brining 16 pounds of turkey breast. The recipe is courtesy of Kikkoman soy sauce. The difficult part of this recipe is finding refrigerator space. I will add picture when I get the turkey in the brine.

Cuban-Style Tomato Rice
This dish was served often for lunch at the Spanish elementary school my husband and I used to go to. The taste brings us back memories. Deep-fried bananas are served instead of wiener sausages in a regular recipe, but our school lunch was served with wiener sausages, so I copied it.Shallow-fry sunny-side up eggs rather than frying them in lots of oil. Oil splatters a lot, so please be careful not to get burnt! I recommend bringing eggs to room temperature in advance. Recipe by Bakaryau

This recipe is for pint jars so adjust if doing larger batches. If you want mild leave out either the peppers or crushed red pepper.
