Ingredients

  1. 1 cupRed lentils
  2. 3 sliceSmoked Bacon, diced
  3. 1/2 mediumSweet onion, chopped
  4. 4 cloveGarlic, smashed and sliced
  5. 1Parsnip, peeled and chopped
  6. 1 boxMushroom broth
  7. 1 cupWater
  8. 1/2 tspPaprika
  9. 1/2 tspTurmeric
  10. 1 pinchSalt
  11. 2Baby bell mushrooms (for garnish)

Cooking Instructions

    In a medium pot, crisp the bacon on medium heat.

    Then add the parsnip and onion. Cook together for 3-5 minutes.

    Next add the garlic and cook about 3 minutes more.

  4. 4

    After adding the broth and water, stir in the lentils.

  5. 5

    Allow to simmer for 30-40 minutes stirring occasionally.

  6. 6

    Once the soup has thickened up, combine the paprika, turmeric and salt.

  7. 7

    Pour all the contents into a blender and liquify for 10 seconds.

  8. 8

    Transfer to bowls and serve hot. Garnish with a few mushroom slices or a squiggle of ketchup.
