These soft, delicious cookies happened when I tried to make peanut butter cookies THEN realized I didn't have enough peanut butter! Instead of panicking I subbed a banana and they turned out so yummy! Chilling is necessary bc they're a bit gooey!

Ingredients

  1. 1 cupsugar
  2. 1 cuppacked brown sugar
  3. 1 cupbutter or margarine, softened
  4. 3/4 cuppeanut butter
  5. 1 eachbanana, mashed
  6. 2 eacheggs
  7. 1 tspbaking soda
  8. 1 tspbaking powder
  9. 1 tspvanilla extract
  10. 3 cupflour
  11. 1sugar (for rolling)

Cooking Instructions

    Preheat oven to 350° F

    Cream together butter, brown sugar, white sugar, and peanut butter

  3. 3

    Mix in mashed banana

  4. 4

    Beat in eggs

  5. 5

    Add baking soda, baking powder, and vanilla. Mix well.

  6. 6

    Mix in flour, one cup at a time

  7. 7

    Chill dough in freezer for about 25 mins

  8. 8

    Roll dough into 1 inch balls and roll in sugar.

    Bake at 350° for 10-12 mins or until edges start to brown. Let sit on cookie sheet for 2 mins before transferring to cooling rack.
