  • 2 tbspcoconut oil
  • 2green onion, sliced thin
  • 4 clovegarlic, minced
  • 2mushrooms, sliced
  • 4sundried tomatoes, chopped
  • 1 bunchfresh basil leaves
  • 1/4 cupcoconut flakes
  • 1/4 cupcashews
  • 1 packagesfirm tofu
  • Mr. Spice Organic Thai Peanut Sauce
  • 1 tbspyellow or red curry
  • water

Steps

30 mins
  1. 1

    Heat coconut oil in a large pan, and sautee the green onion, garlic, mushrooms, sundried tomatoes.

  2. 2

    After a couple minutes add basil, coconut flakes, and cashews.

  3. 3

    Add tofu, sauce, a bit of water, and curry and let simmer until flavours are fully absorbed by the tofu.
