This is a simple, mild and comforting soup, perfect for a cold day. It goes well with crusty or garlic bread. For a stronger flavour, fry an onion and add it to the stock with the garlic granules.

Ingredients

2-3 servings
  1. 1vegetable stock cube
  2. 1 tspgarlic granules
  3. 200 mlboiling water
  4. 4celery stalks
  5. 3large potatoes (about 600g)
  6. 800 mlcold water
  7. 100 mldouble cream (optional)
  8. salt & pepper (optional)
  9. strong cheddar (optional)

Cooking Instructions

    Put the stock cube in a jug with the boiling water and whisk. Add the garlic granules.

    Chop the celery into small pieces and add to a pan with the stock. Bring to a boil.

  3. 3

    Chop the potatoes into small pieces and add to the pan. As the mixture boils, add the cold water. Simmer for 25 minutes or until the celery has softened.

    Transfer the soup to a blender, blend until smooth and then return it to the pan.

    Stir in the double cream, if desired, and heat gently for about 10 minutes.

    Serve and enjoy! Add salt and pepper to taste. Stir in some grated cheese for extra flavour.
