Tasty Soup with Celery Leaves

I wanted to use fresh celery leaves straight from the stem.

Use whatever vegetables you have in your kitchen. It's nice with tomatoes, mushrooms or beans. Make sure you simmer everything with the macaroni to get the nice, mellow fragrance. For 4-5 servings. Recipe by Hoink

Ingredients

4 servings
  1. 4stems' worth Celery leaves
  2. 1/2 mediumOnion
  3. 1Potatoes
  4. 5 cmCarrot
  5. 4rashers Bacon
  6. 1 cloveGarlic
  7. 50 gramsYou favourite macaroni
  8. 1Bay leaf
  9. 1Soup stock cube
  10. 1 tspSalt
  11. 1 dashBlack pepper
  12. 1 tbspOlive oil
  13. 1000 mlWater

Cooking Instructions

    Roughly cut the celery leaves, and dice the onion, carrot and potato. Slice the bacon into 1 cm pieces and finely chop the garlic.

    Pour olive oil into a saucepan and fry the onion and garlic. Add the bacon, and when the oil starts to render, add the vegetables and fry.

    When everything has cooked evenly, add water and bay leaf. Skim off any scum, add the soup stock and macaroni, and simmer over low heat for 20 minutes.

    When the macaroni has softened, season with salt and pepper and it's done.
