My son fancied something sweet after dinner so we raided the cupboards and made this together.

Ingredients

  1. 100 gramsChocolate Chip Cookies
  2. 45 gramsButter
  3. 1 tspCaster sugar
  4. 1 BarMilk Chocolate
  5. 1Large ripe Banana
  6. 190 mlDouble Cream

Cooking Instructions

    Crush the cookies until fine.

    Melt the butter in a bowl in the microwave

    Mix together the cookie crumbs, butter and sugar until combined.

    Using small cheesecake tins (with removable bottoms) press the mixture into them until about a quarter full.

    Bake in the oven for 5-10 mins and leave to cool completely.

    Melt the chocolate and leave aside to cool a little.

    Whisk half the cream until it is thick. In a separate bowl mix the other half and add a couple of teaspoons of the melted chocolate and mix until creamy.

    Chop the banana and place one layer to cover top of the biscuit base.

    Spoon a layer of the plain whipped cream and cover the banana

    For the next layer, dip the banana pieces in the chocolate and place on top of the cream.

    Next, cover the bananas with the chocolate cream. This should reach the top of the tin and be the last layer.

    To finish, add a few of the remaining bananas on top. You can also grate a little chocolate over the top.
