We adore artichoke spinach dip. But I may not always prepare it as a dip. Not wanting to wait to snack, I made it into a sinful meal.
Plus I wanted to say that I so enjoyed Beemarg 's spinach pie that I've tried my own quiche and now this recipe. Your delicious food inspired me Bianca, thanks!

Spinach Artichoke Quiche

Ingredients

  1. quiche
  2. 19" deep dish pie crust, freshly made or frozen
  3. 113.75 ounce can artichoke hearts, drained
  4. 9 ozbag of frozen spinach leaves, thawed and all excess water squeezed out, 2/3 of a one pound bag
  5. 1 cuphalf and half
  6. 4 largeeggs
  7. 2 tbspall-purpose flour
  8. 1 3/4 cupshredded mozzarella
  9. 1/4 cupasiago cheese, grated
  10. 1 tspsalt
  11. 1/4 tspblack pepper
  12. 1/2 tsphot sauce, I use sriracha

Cooking Instructions

    Preheat oven to 450°F.

    In a large bowl beat eggs,, half and half, salt, pepper and hot sauce.

    After you have drained the artichokes, finely chop them.

  4. 4

    Add artichokes, drained spinach and cheeses. Fold into mix.

    Pour into prepared pie crust.

    Place quiche on a baking tray and bake for 20-25 minutes or until golden brown.

    Let cool 15 minutes before slicing.

I used pepperjack instead of mozzarella and I liked that too!
