Ingredients

  1. 2 tbspolive oil, extra virgin
  2. 2medium sized yellow onions, peeled and chopped
  3. 2 ozchorizo, diced
  4. 4 clovegarlic, minced
  5. 1 1/2 lbground beef
  6. 4ripe tomatoes, chopped (or 28 oz can whole tomatoes)
  7. 2 tbspred wine vinegar
  8. 1 tbspground cinnamon
  9. 2 tspground cumin
  10. kosher salt
  11. black pepper
  12. 2bay leaf
  13. 2/3 cupraisins
  14. 2/3 cuppitted stuffed olives
  15. pinchground cloves
  16. pinchnutmeg
  17. 1 cupwhite rice

Cooking Instructions

    Put the olive oil in a large, heavy pan set over a medium heat flame and heat until shimmers.

    Add onions, chorizo, and garlic and cook until onions are soft (10 min).

    Add the ground beef and cook. Season with salt and pepper.

  4. 4

    Add tomatoes, vinegar, cinnamon, cumin, bay leaves, cloves and nutmeg. Lower heat and let simmer, covered, for about 30 minutes.

    While stew is cooking, cook rice per directions.

  6. 6

    Uncover the pan, and add the raisins and olives. Allow to stew for another 15 minutes.

    Serve over white rice.
