Chicken squash noodles soup

I was craving for noodles soup for quite a while and I was thinking of cooking the recipe my girlfriend thought me before. She uses egg noodles for her recipe but since I cannot find any egg noodles, I tried using angel hair pasta and it was a good substitute. Those who likes soup noodles with the flavor of chicken and the sweetness of squash, this is a good recipe for you.

Chicken squash noodles soup

Ingredients

  1. 1/2 kgchicken chopped into 1 cm cubes
  2. 1/2 kgsquash chopped 2-4 mm thick
  3. 1/2 headgarlic
  4. 1 piecelarge sized onion
  5. 1salt and pepper to taste
  6. 1water
  7. 1flour or corn starch to thicken
  8. 1/2 kgnoodles (I cannot find any egg noodles so I used angel hair pasta instead)
  9. 1cooking oil
  10. 1chicken broth cubes or chicken stock
  11. 1sesame oil (optional)

Cooking Instructions

    Add a little amount of chopped onions, chopped garlic, salt and pepper to the chicken and squash in separate containers. Let rest for at 15-30 minutes to lock in flavors.

    Cook the angel hair pasta based on the instructions.

    Once the angel hair is cooked, drain the noodles and set aside (but don't throw the water).

    Saute the remaining garlic and onions in a separate pan. Once the garlic and onions are ok, add the chicken.

    Add salt, pepper and the water from where the angel hair was cooked based on your personal preferrence. Bring to a boil. (I like minimal liquid in my soup so I don't put all the water in the chicken).

    Once the chicken is cooked, add the squash to the pan and cook for about 15 minutes or until the squash is cooked based on your preference.

    Add the noodles to the pan where you're cooking the chicken. Add chicken broth cubes or chicken stock if needed to further enhance the taste.

    Add thickeners (like flour or corn starch) to thicken the soup.
