Ingredients

  1. 3 cupscold/leftover cooked white rice
  2. 1/2 cupbutter
  3. 1medium chopped yellow onion
  4. 2 stalkschopped celery
  5. 2 clovesminced garlic
  6. 2carrots, diced into small cubes
  7. 1 1/2 cupsfresh broccoli, cut small
  8. 1 cupfrozen peas
  9. 3eggs, beaten
  10. 1/4-1/2 cupsoy sauce
  11. Pepper

Cooking Instructions

    Use the biggest and deepest skillet you have!

    Melt butter

  3. 3

    Add onion, garlic,celery and carrots. Saute until onions are transparent (about 5 minutes)

    Add peas and broccoli and cook for 1 more minute, until peas are thawed.

    Push your veggies to one side of your skillet and start to scramble your eggs on the other side. Once eggs are cooked you can blend them in with veggies.

    Season with pepper

    Then add a small amount of rice, and a little soy sauce, small amount of rice and a little soy sauce (keep alternating until it's all mixed) you may or may not need to add more soy sauce. Do a taste test at this point to see what you prefer.
