Cooking Instructions

Heat oven to 375°F

Cut Bacon in to bite size pieces.

Fry Bacon until slightly crisp.

Chop Onion and cilanto.

Mince Garlic Clove

Combine all ingredients. Except Jalapenos.

Cut Jalapenos in half.

Take out all seeds and membrane.

Fill in Jalapenos.

Put in oven for about 10 minutes or until cheese is melted.

I've made plenty of different stuffed jalapenos but this is by far the best. it took a while but they came out awesome. It is very important that you coat these 3 times or the filling may leak out. If you don't like a crispy crust you can coat it twice instead.

Blue cheese, bacon, and apple stuffed mini peppers
The inspiration for this little gem of an appetizer sprang from the bag of sweet mini peppers in our fridge. I decided to throw them together with some leftover gorgonzola, a few strips of crispy bacon, and a bit of tart apple and see what happens. The result was fantastic! These will definitely be served if/when we're ever allowed to entertain again.
