Ingredients

  1. 4 cupsrice
  2. 1kilo chicken
  3. vegetable oil
  4. 15large tomatoes
  5. 4large onion
  6. 6 clovesgarlic and ginger
  7. 6medium size fresh pepper
  8. 2 sachettomatoes paste
  9. 10medium size carrot
  10. 10medium size green pea
  11. 2bulb green pepper
  12. 5seasoning cube
  13. salt to taste / chicken seasoning

Cooking Instructions

    Wash your tomatoes,pepper, garlic,,ginger,and 2 onions,
    put in a blender
    blend till its smooth..
    put in a pot and cook till the water drys off..

    Prepare your chicken by washing with warm salty water..
    put in a pot, add salt and 2 seasoning cube..
    blend some onion,ginger,garlic and pepper..add to the chicken,add your chicken seasoning..
    stir very well..
    steam for about 10min..

    Wash and slice your green pea,carrot,and green pepper
    set aside...

    Slice the remaining onion and set aside
    put a pot on fire
    pour in your vegetable oil
    pour in your sliced onion,allow to cook for 1min..
    pour in your tomatoes paste and stir for 4min..
    pour in your cooked blended tomatoes and stir for about 5min..

    When the steamed chicken is ready
    strain out the stock and allow to cool..

    Deep fry chicken till its golden brown

    Add the chicken stock to the stew stir and allow to cook for 5min..

    Add your mixed vegetable and stir (carrot,green pea,green pepper).

    Wash and put rice in a clean pot
    add water and cook for 6min
    drain water from the rice..

    Add the rice little by little to the stew and stir..
    reduce the heat to be very low..
    cover the pot and allow the rice to steam..

    Your Ghana jollof rice is ready
    server with any drink of your choice
