Ingredients

  1. 1 largeGarlic Clove
  2. 1/3inch. Peeled Fresh Ginger Stick
  3. 1/2 smallBulb Fennel Cored/Diced
  4. 1 smallCarrot Peeled/Diced
  5. 1 smallParsnip Peeled/Diced
  6. 1 largeShallot Cut in half
  7. 3 tbspUnsalted Butter
  8. 2 tspCurry Powder
  9. 1 cupBrown Lentils picked over and rinsed
  10. 1 quartChicken or Veg. Broth
  11. 1Kosher Salt/Pepper to taste

Cooking Instructions

  1. 1

    Pulse garlic/ginger in food processor until chopped. Add fennel/carrots/parsnips/shallot and pulse until coarsely chopped.

    Melt 2tbs. of the butter in a sauce pan over medium-high heat. Add the chopped veg. and cook stirring until softened, about 3min.

  3. 3

    Add the curry powder and cook, stirring, until the curry powder is fregrant, about 30sec.
