Cooking Instructions

boil cod fish in water for 5-7 minutes to remove some of the salt

cut or shred codfish into small pieces

saute cod fish, onions, peppers, garlic in butter.

add vegetables, water and stir

cover pan and cook on low heat till vegetables are tender

add black pepper and salt if needed

other types of vegetables can be added or substituted

I came up with this salad just to use two leftover plain sea bass fillets from the previous night. I am feeling strangely proud of it.The fillets were not enough to make a whole meal so I decided they would help make a fun friday salad.I immediately wanted to use some sauted cabbage and peas if only to include the acidic heat of the lemon pepper seasoning, which I always go for when cooking fish.At this point it didn't look like a salad at all so I decided to use some fresh produce to balance it out.And then there it was...Fun. Salmon Salad Salmon Salad
So I made Vickys Lemon & Dill Salmon Skewers for dinner last night. They are delicious by the way and I highly recommend trying them!! I bought 4 salmon fillets, about 2 lbs and cut the cubes from the thick center portion of each fillet. This left the thinner edges of each fillet to do something with. So this morning I decided to make a quick salmon salad with the scrap salmon. I even had about 4 cubes of grilled salmon left over from last night that I added in to my flaked salmon. I used all my fresh dill last night so used dried dill weed in the salad, but fresh can certainly be used. Great use of leftovers.I'd add a link to Vicky's amazing recipe, but I don't know how! I often have a salad with fried onions on top, and I got a hint from it. I used fried salmon skin instead.The oil spits when frying the salmon skin.If you're afraid of that, it's better to coat the skin with cake flour. Recipe by classy cookpad.japan
