I don't have a grill with which to make conventional grilled fish tacos, so I tried cooking the fish in foil. It tasted great and healthy. The mango is awesome too.

Ingredients

  1. Fish
  2. 4fish fillets (e.g. tilapia)
  3. 1/4 cupolive oil
  4. 2limes (juice and zest)
  5. 2 clovegarlic - minced
  6. 1 stalkgreen onion - chopped
  7. 1 tspblack pepper
  8. Salsa
  9. 1mango - cut into bite-sized chunks/cubes
  10. 1avocado - cut into bite-sized chunks/cubes
  11. 1tomato - cut into bite-sized chunks/cubes
  12. 8corn tortillas
  13. 1lime (juice)
  14. 1Cilantro - chopped

Cooking Instructions

    Create a marinade by combining the fish ingredients (except for the fish fillets), then pour over fish and marinate overnight in fridge.

    Preheat oven to 450°F.

    Line a baking dish with tin foil and place the fish on the foil. Pour excess marinade on the fish. Fold the ends of the foil up to keep the marinade inside. Tightly cover the top of the fish with more foil, so that the fish fillets are completely encased. Bake for 15-20 minutes until moist and flaky.

    Make the salsa by combining all salsa ingredients. Add diced red onion if desired.

    Heat tortillas on warmed skillet or in the microwave. Place fish and salsa in tortillas and enjoy!
